Vegan Apple Muffins

These muffins are delicious. We adapted the recipe from an apple bread recipe in one of my first vegetarian cookbooks, The Enchanted Broccoli Forest. Just a few changes made the recipe vegan. You can still use this recipe as a bread, we just prefer muffins. Granny Smith apples work well. We’ve also made it with really good Fuji apples.

Here’s the recipe:

1 1/2 cups peeled grated tart apple (2 medium or 3 small apples)
1/2 tsp grated lemon rind
3 tbsp fresh lemon juice
1/2 cup light brown sugar
3 tbsp melted earth balance or other plant-based margarine
1 egg substitute (Bob’s Redmill or other)
2 cups whole wheat flour or whole wheat pastry flour
2 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1 tsp vanilla extract

Preheat oven to 350 degrees. Lightly grease muffin pan, or use muffin liners or non-stick pan. Combine grated apple, lemon juice, lemon rind in a medium bowl. Mix in sugar, margarine and egg substitute. Sift together flour, baking powder, baking soda, salt and cinnamon in another medium bowl. Make a well in the center and add the apple mixture and vanilla. Stir until combined. Drop into muffin pan to make 10 to 12 muffins (batter will be quite thick, you can almost make balls with your hands and drop them in to the pan). Bake for 18 to 20 minutes at 350 degrees. Cool briefly on a rack before eating. Enjoy!
