Black Bean, Mango & Quinoa Salad from Veganomicon

We love this salad. It’s super sweet but hearty too, and perfect for a summer gathering. We recommend making the quinoa in advance and chilling it in the refrigerator until you’re ready to make the salad. A bit of chopping is required, but the end result makes it worth it. This recipe is from Veganomicon, one of our favorite books.

Here’s the recipe:

1 large mango diced
1 red bell pepper diced
1 cup chopped scallions (we have used regular onions in a pinch)
1 cup fresh chopped cilantro 
2 tablespoons red vinegar
2 tablespoons grapeseed oil
1/4 teaspoon salt
2 cups cooked quinoa, chilled
1 can (15oz) black beans, drained and rinsed

To prepare the quinoa, put one cup of quinoa (red or yellow – shown here with the red) in two cups of water, bring to a boil, then simmer for 18 minutes (or until all the water is absorbed), then fluff with a fork and set aside (or chill in this case).

Combine mango, red bell pepper, scallions and cilantro in a mixing bowl.  Add the red wine vinegar, grapeseed oil, and salt.  Stir to combine.  Add the quinoa and stir until everything is well incorporated.  Fold in the black beans.  Serve immediately or let sit to let the flavors mix.  Enjoy!

    I am going to try this with some cooked Wheat Berries grain I have. I am sooo glad I discovered this grain, it’s crunchy and really “gets you going” if you know what I mean!!!! Only drawback is the HOUR it takes to cook it, but it is SO WORTH IT.
